Cinnamon Pork Tenderloin

Ingredients:

 

  • ¼ cup soy sauce
  • ¼ cup packed brown sugar
  • 2 tbsp. juice of your choice
  • 1 ½ tsp. dried minced onion
  • 1 tsp. cinnamon
  • 1 tbsp. oil
  • 1 clove of garlic, minced
  • 1 pork tenderloin
  • 1 tbsp. oil

 

Method:

 

  1. Place all ingredients except the pork tenderloin in a large resealable bag.  Seal and shake to mix.  Place the pork tenderloin in the bag and marinate in the refrigerator for 6 to 12 hours.  When you are ready to prepare dinner, remove the tenderloin from the bag, discard the marinade and pat meat dry.
  2. If cooking in the oven, preheat to 350 degrees. Heat 1 tbsp. of oil in a frying pan over medium high heat.  Place tenderloin in the pan and brown evenly on all sides (about 5 minutes). Place tenderloin in a lightly oiled roasting pan and place in the preheated oven for a further 15 minutes.
  3. If cooking on the BBQ, preheat grill to medium high heat.  Lightly oil grate, place tenderloin on the BBQ, browning on all sides, cooking for 15 to 20 minutes.
  4. Transfer to cutting board, tent with foil, rest 5 minutes.  Cut into ½ inch slices, the pork should be slightly pink in the middle.

 

Serves 4

Serve with Sweet Potato Fries, green vegetables, or salad.
