Ingredients:
- 1/2 cup mayonnaise (or whipped dressing)
- 2 tsp. Dijon mustard (or yellow mustard)
- 2 tsp. lemon juice
- ¼ tsp. salt
- ¼ tsp. pepper
- 2 ½ cups shredded carrots
- 2 green onions, chopped
- ½ cup raisins (optional)
Method:
- In a bowl, stir together mayonnaise, mustard, lemon juice, salt & pepper.
- Mix in carrots, raisins and green onion.
- Cover and refrigerate for up to 24 hours.
Serves 4 people.
