Ingredients:

 

  • ½ medium red onion, sliced
  • 2 medium tomatoes, wedged
  • ¼ English cucumber, sliced
  • ¼ green pepper , sliced
  • Handful of pitted black olives, sliced
  • ¼ cup feta cheese, crumbled
  • 3 tbsp. olive oil
  • 1 ½ tbsp. lemon juice
  • 1 clove garlic, minced
  • 1 tsp. dried oregano
  • Salt & pepper to taste

 

Method:

  1. in a small bowl soak the red onion in water for 10 minutes.
  2. In a small jar, combine oil, lemon juice, garlic & oregano, put lid on tightly and give it a good shake. Add salt & pepper to taste.
  3. Combine the prepared tomatoes, cucumber, green pepper and olives in a serving dish. Scatter onions around, then top with feta and drizzle with dressing
  4. Serve with Lemony Chicken and Potatoes.
