Pasta Salad with Tuna & Peppers

Ingredients:

 

2 cups small pasta shells or other pasta shapes

1 can Tuna, drained and flaked

2 or 3 celery stalks, finely chopped

3 or 4 green onions, finely chopped

1 medium bell pepper, chopped (use a variety of colours if available)

¼ cup chopped fresh herb of your choice (tarragon, basil, parsley, cilantro, etc.)

1/3 cup mayonnaise or whipped salad dressing  (more may be added if needed)

2 tsp. Dijon mustard

Salt & pepper to taste

 

Method:

In a large pot of boiling salted water, cook pasta until tender but firm, about 7 minutes.  Drain and rinse with cold water to cool.  Drain again and place in a salad bowl.

Add remaining ingredients and mix gently until well combined.

Refrigerate until ready to serve.

You can design your own salad by experimenting with other combinations:

Vegetables you might like to try adding: Tomato, cucumber, zucchini,  broccoli, grated carrots, onion, olives, or niblets corn, peas (frozen or canned),

Make a vegetarian salad by replacing the tuna with a can of beans: Kidney beans or chick peas would work well
