Bean Salad – a Lighthouse Favourite

Ingredients:
For the salad:
2 tins green beans, drained
2 tins yellow beans, drained
1 tin kidney beans, drained and rinsed
2 medium sized onions, cut into rings
1 large green pepper, cut into strips
For the dressing:
1 cup white sugar
1 cup white vinegar
1/2 cup vegetable oil
1 1/2 tsps. salt
1 1/2 tsps. pepper
Method:
Place the beans, green pepper and onions in a large bowl.
Put the dressing ingredients in a jar and shake well to blend.
Pour the dressing over the salad but don’t stir.
Cover and refrigerate for several hours.
Toss the salad and refrigerate until ready to serve.
