Bean Salad – a Lighthouse Favourite

Ingredients:

 For the salad:

  • 2 tins green beans, drained
  • 2 tins yellow beans, drained
  • 1 tin kidney beans, drained and rinsed
  • 2 medium sized onions, cut into rings
  • 1 large green pepper, cut into strips

For the dressing:

  • 1 cup white sugar
  • 1 cup white vinegar
  • 1/2 cup vegetable oil
  • 1 1/2 tsps. salt
  • 1 1/2 tsps. pepper

 

Method:

  • Place the beans, green pepper and onions in a large bowl.
  • Put the dressing ingredients in a jar and shake well to blend.
  • Pour the dressing over the salad but don’t stir.   Cover and refrigerate for several hours.
  • Toss the salad and refrigerate until ready to serve.
