Ingredients:
- 1 cup couscous
- Chicken broth
- 3 hard-boiled eggs, chopped
- 3 green onions, chopped
- 3 tbsp. olive oil
- 1 tbsp. lemon juice
- 2 cloves of garlic minced
- 1 tsp. dried thyme leave
- Salt & pepper to taste
Method:
- Cook couscous according to package directions, but substitute chicken broth for water. Let cool.
- Place cooled couscous in a large bowl. Add chopped eggs and green onions
- Mix dressing ingredients in a jam jar: olive oil with lemon juice, garlic and thyme. Shake well and pour over couscous mixture, stirring to combine.
