Broiled Lemon Pepper Fish



  • 4 to 6 frozen fish fillets
  • 1/3 cup mayonnaise (or whipped dressing)
  • 1 tbsp. grated lemon rind
  • ½ tsp. black pepper
  • ¼ tsp. salt
  • 1/4 cup panko bread crumbs (optional)
  • Lemon wedges




  1. Run fish under cold water to thaw.
  2. Arrange fish in single layer on baking sheet lined with foil or parchment paper; set aside.
  3. In a bowl, stir together mayonnaise, lemon rind, pepper and salt; spread over fish.
  4. Top with bread crumbs if using.
  5. Broil fish about 8 inches (20cm) from heat until golden brown on top about 5 minutes.  Reduce oven to bake at 500 degrees F until fish flakes easily when tested, another 4 to 5 minutes.
  6. Serve with lemon wedges, rice on the side and a green salad for a delicious summer meal.


Serves 4 people.
