Ingredients:
- ¼ cup soy sauce
- ¼ cup packed brown sugar
- 2 tbsp. juice of your choice
- 1 ½ tsp. dried minced onion
- 1 tsp. cinnamon
- 1 tbsp. oil
- 1 clove of garlic, minced
- 1 pork tenderloin
- 1 tbsp. oil
Method:
- Place all ingredients except the pork tenderloin in a large resealable bag. Seal and shake to mix. Place the pork tenderloin in the bag and marinate in the refrigerator for 6 to 12 hours. When you are ready to prepare dinner, remove the tenderloin from the bag, discard the marinade and pat meat dry.
- If cooking in the oven, preheat to 350 degrees. Heat 1 tbsp. of oil in a frying pan over medium high heat. Place tenderloin in the pan and brown evenly on all sides (about 5 minutes). Place tenderloin in a lightly oiled roasting pan and place in the preheated oven for a further 15 minutes.
- If cooking on the BBQ, preheat grill to medium high heat. Lightly oil grate, place tenderloin on the BBQ, browning on all sides, cooking for 15 to 20 minutes.
- Transfer to cutting board, tent with foil, rest 5 minutes. Cut into ½ inch slices, the pork should be slightly pink in the middle.
Serves 4
Serve with Sweet Potato Fries, green vegetables, or salad.
