Flora’s Sweet and Sour Pork Stir Fry with Peaches

Ingredients:                              

 

  • 1 boneless pork tenderloin, cut in 1 inch cubes
  • 2 tbsp. soy sauce
  • 1 tbsp. vegetable oil
  • 1-2 cloves garlic, minced
  • 2 tbsp. vegetable oil
  • salt and pepper
  • 2 medium onions, cut in 8ths
  • 1 green pepper, cut in small squares
  • ½ cup granulated sugar
  • 2 tbsp. cornstarch
  • ¼ tsp. salt
  • 1/3 cup vinegar
  • 1 cup water
  • 2 tbsp. tomato paste
  • 1 can (14oz) sliced peaches, drained
  • 1 large tomato, cut in wedges

 

Method:

 

  1. Toss pork cubes in mixture of soy sauce and 1 tbsp. oil. Marinate for about 15 minutes.
  2. In a large frying pan, sauté garlic clove in 2 tbsp. oil over medium high heat until brown. Brown pork cubes in the garlic flavoured oil, then reduce heat and cook about 5 minutes longer, stirring often.
  3. Sprinkle lightly with salt and pepper. Add onions and green pepper and stir fry for 2 to 3 minutes.
  4. While meat and vegetables are cooking, make the sauce in a small saucepan. Mix together sugar, cornstarch and salt. Stir in vinegar, water and tomato paste. Bring to a boil, stirring until smooth and clear.
  5. Drain any excess fat from the frying pan. Add the sauce to the pork and vegetable mixture and simmer for a minute. Taste and adjust seasoning if necessary.
  6. Add drained peaches and tomato. Cover pan and cook gentle just until heated through.

 

Serve over rice.
