Gisele’s Carrot Cake

For the cake:

Ingredients:

  • 2 cups white sugar
  • 4 eggs
  • 1 1/3 cups cooking oil
  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 4 cups grated carrots
  • ¾ cup chopped walnuts

Method:

  1. Preheat oven to 350F.
  2. Prepare all ingredients
  3. Beat sugar and eggs until thickened.
  4. Add oil, and dry ingredients (flour, baking soda, baking powder & cinnamon) and stir until well combined
  5. Fold in nuts and grated carrots.
  6. Pour mixture into a greased 9” x 13” baking dish / pan
  7. Bake for 40 minutes.

 

For the Cream Cheese Frosting:

Ingredients:

  • 8 oz. package of Cream Cheese
  • ½ cup margarine or butter
  • 2 tsp. vanilla
  • 3 cups icing sugar
  • ¼ cup chopped walnuts (optional)

Method:

  1. Place all ingredients in a bowl and beat until velvety.
  2. Once cake has cooled, smooth icing over top.
  3. If using, sprinkle chopped walnuts over icing.
