Moira’s Couscous Salad

couscous, eggs, lemon



  • 1 cup couscous
  • Chicken broth
  • 3 hard-boiled eggs, chopped
  • 3 green onions, chopped
  • 3 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 2 cloves of garlic minced
  • 1 tsp. dried thyme leave
  • Salt & pepper to taste




  1. Cook couscous according to package directions, but substitute chicken broth for water. Let cool.
  2. Place cooled couscous in a large bowl. Add chopped eggs and green onions
  3. Mix dressing ingredients in a jam jar: olive oil with lemon juice, garlic and thyme. Shake well and pour over couscous mixture, stirring to combine.
