Sally’s Minestrone Soup

pasta, spinach, tomato, vegetables



3 tbsp olive oil

1 large onion, chopped

½ cup each chopped celery, carrot and green pepper

1 garlic clove

5 cups chicken stock or vegetable stock

1 can 28 oz diced tomatoes, drained

1 tsp Italian seasoning

Salt/pepper to taste

1 bay leaf

1 can 19oz mixed beans, drained and rinsed

2 cups chopped spinach

1 cup small cooked pasta, your choice

Parsley/grated parmesan cheese to taste



  1. Heat oil over medium heat. Add onion, celery, carrot, green pepper and garlic. Cook, 5 to 6 minutes, stirring occasionally until vegetables are soft.   Do not let them brown.
  2. Stir in stock, tomatoes, salt/pepper, Italian seasoning, bay leaf. Bring to boil, reduce heat, simmer 10 to 15 minutes.
  3. Stir in beans, spinach and simmer a further 5 minutes.
  4. Add cooked pasta just to heat through.
  5. Sprinkle with parmesan.
  6. Serve and enjoy.
