Pizza Muffins

2 cups flour

¼ cup sugar

1 tbsp baking powder

1 tsp salt

1 tsp Italian seasoning

1 tsp baking soda

1 cup cheddar cheese, diced

1 cup sour cream

2 eggs

¼ cup butter melted

½ cup chopped red or green pepper

¼ cup pizza sauce

grated mozzarella



  1. Preheat oven to 400. Line 12 muffin cups with liners or spray muffin tin with Pam.
  2. In large bowl whisk flour, sugar, baking powder, salt, Italian seasoning and baking soda until combined. Stir in cheddar cubes.
  3. Whisk together sour cream, eggs, melted butter until smooth.
  4. Stir into flour mixture.  The batter will be quite thick.
  5. Add chopped peppers and stir. (if batter appears too thick add 2 or 3 tablespoons milk.)
  6. Spoon into muffin cups.
  7. Spoon 1 tsp pizza sauce and sprinkle mozzarella on top of each muffin.
  8. Bake 20 minutes until golden and toothpick inserted comes out clean. Cool 5 minutes before removing from muffin tin, cool completely on a wire rack.


These muffins freeze very well.
