Ingredients:
2 cups flour
¼ cup sugar
1 tbsp baking powder
1 tsp salt
1 tsp Italian seasoning
1 tsp baking soda
1 cup cheddar cheese, diced
1 cup sour cream
2 eggs
¼ cup butter melted
½ cup chopped red or green pepper
¼ cup pizza sauce
grated mozzarella
Method:
- Preheat oven to 400. Line 12 muffin cups with liners or spray muffin tin with Pam.
- In large bowl whisk flour, sugar, baking powder, salt, Italian seasoning and baking soda until combined. Stir in cheddar cubes.
- Whisk together sour cream, eggs, melted butter until smooth.
- Stir into flour mixture. The batter will be quite thick.
- Add chopped peppers and stir. (if batter appears too thick add 2 or 3 tablespoons milk.)
- Spoon into muffin cups.
- Spoon 1 tsp pizza sauce and sprinkle mozzarella on top of each muffin.
- Bake 20 minutes until golden and toothpick inserted comes out clean. Cool 5 minutes before removing from muffin tin, cool completely on a wire rack.
These muffins freeze very well.
