1 can black beans (19oz) drained and rinsed
2 cups assorted chopped fresh vegetables (red pepper, green pepper, diced carrot, celery, tomato, cucumber)
1 cup frozen or drained corn
¼ cup chopped red onion or green onion (optional)
Juice of 1 lime or 3 tbsps apple, orange, cranberry juice
Salt/pepper to taste
Optional: ½ tsp cumin or a few dashes hot sauce
Note: You want to be able to pick this up with a nacho or carrot stick as a dipper. Play with the ingredients in this and adjust for your family’s taste. Wonderful in the lunch box!
