Ingredients:
- 1 tbsp. olive oil
- 1 ½ lb. ground chicken
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 1 sweet pepper, seeded and chopped (colour of your choice)
- 1 tbsp. chilli powder
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1 tsp. salt
- pepper to taste
- 1 28 oz. tin diced tomatoes
- 1 19 oz. tin black beans, drained and rinsed
- 2 cups frozen corn, defrosted
- 1/3 cup fresh cilantro
- 1 cup grated cheese
Method:
- Heat oil in large saucepan. Add chicken and cook, stirring until pink disappears (3 to 4 minutes).
- Add onions, garlic and green pepper and cook until softened.
- Add chilli powder, cumin, oregano, salt, pepper, tomatoes and beans.
- Bring mixture to the boil and then reduce heat. Cover and simmer for 30 minutes.
- Stir in corn. Cook uncovered for 10 to 15 minutes until mixture thickens a little.
- Serve sprinkled with cilantro and cheese.
