Chicken and Black Bean Chili
black beans, chicken, chili powder
1 tbsp. olive oil
1 ½ lb. ground chicken
1 large onion, chopped
3 cloves garlic, chopped
1 sweet pepper, seeded and chopped (colour of your choice)
1 tbsp. chilli powder
1 tsp. ground cumin
1 tsp. dried oregano
1 tsp. salt
pepper to taste
1 28 oz. tin diced tomatoes
1 19 oz. tin black beans, drained and rinsed
2 cups frozen corn, defrosted
1/3 cup fresh cilantro
1 cup grated cheese
Heat oil in large saucepan. Add chicken and cook, stirring until pink disappears (3 to 4 minutes).
Add onions, garlic and green pepper and cook until softened.
Add chilli powder, cumin, oregano, salt, pepper, tomatoes and beans.
Bring mixture to the boil and then reduce heat. Cover and simmer for 30 minutes.
Stir in corn. Cook uncovered for 10 to 15 minutes until mixture thickens a little.
Serve sprinkled with cilantro and cheese.
